2002 Cabernet Sauvignon

Our Cabernet Sauvignon is from our two-acre vineyard owned and farmed by the Dascomb family located at the East end of Santa Ynez Valley. The region is becoming known for its Bordeaux varieties (Cabernet Franc, Merlot and Cabernet Sauvignon ). The heavy clay soil and 30-year old vines
make this vineyard unique--one of the oldest Cabernet Sauvignon vineyards in Santa Barbara County.
With age-old vines and hot summer days, the vineyard produces berries which tend to be very small and make an exceptionally dark, blackberry/cassis flavored wine with soft tannins. This is an extracted bold wine that has been made to retain the signature of the vineyard.
Harvest occurred on October 22, 2002. The fruit was crushed and fermented for 10 days in small open topped containers and aged in French oak barrels. The final blend includes minor additions of 15% Cabernet Franc and 5% Merlot from fruit sourced in Santa Ynez.
Cabernet Sauvignon pairs well with red meat, a hearty stew, and barbeque.
Sensory Evaluation: Black current, violets, dark fruits, cherry, medium to heavy body, young soft tannins, complex with a long finish.
