Syrah, a Rhone variety, is well suited to our California Central Coast climate. The cool ocean breeze and moderate climate produce a lively and complex Syrah of intense flavor and aroma. Paradise Vineyard is located at the extreme East end of Santa Ynez Valley above Lake Cachuma and was originally part of the old Spanish San Fernando Rey Ranch. This location can be quite warm during the day and yet still very cool at night. This is our first vintage from this vineyard and we find that his has some very pleasant flavors. This wine presents characteristic of a warmer climate vineyard with ripe and bright cherry and grapey flavors.
Only one and a half tons were purchased and harvested on October 14. Sugar content at harvest was approximately 27 Brix. Twelve days of fermentation followed in one small open top container. Only one punch down per day was performed. We then barrel aged for 22 months in neutral French oak barrels and bottled on September 19, 2005 after light filtering.
This wonderful wine goes well with cheese and fruit appetizers, red meat dishes, especially lamb, beef, barbecued or sausage as well as wild game.
Sensory Evaluation: Aromatic bright cherry, grape and smooth vanilla flavors on a long finish.
